“Pacific Breeze” Sandwich with a Clever
Wiki Sauce
Recipe

Makes 6 sandwiches
Kebabs
6 wooden skewers
1 pound pork tenderloin - cut in 18
2-inch pieces
18 large shrimp – peeled &
deveined
1 red onion - cut in 2x2-inch squares
1 can of pineapple chunks
Sauce
1 cup ketchup
1/2 cup Mt. Olive Sweet Relish
1 tablespoon horseradish
2 tablespoons sour cream
1 tablespoon Cholulaâ
Hot Sauce
2 tablespoons chopped fresh cilantro
6 deluxe 10-inch rolls
3 cups shredded lettuce

Soak the wooden skewers in water for
a minimum of 30 minutes prior to using so they don’t burn on the
grill.

Prep the shrimp and pork tenderloin
and hold in refrigerator until ready to use.

Prep the onion and drain pineapple
chunks, reserving the liquid.

On each skewer, assemble the kebabs
by placing pork, shrimp onion and pineapple. Do this sequence 1 more
time and finish each kebab with a piece of shrimp and pork.

Place the 6 kebabs in a large
plastic container and pour the reserved pineapple juice over the
kebabs. Cover container and store in refrigerator for use.

Combine the 6 sauce ingredients.
Cover tightly and refrigerate until ready to use.

Preheat your grill to medium. Place
kebabs on the grill and cook until the shrimp the pork are firm.

In each bun, place some sauce,
shredded lettuce and a kebab. Grasp the sandwich and remove the
skewer. Top with more Clever Wiki Sauce.
