Ingredients

---BAHN MI SANDWICH---
1 small demi baguette
2-3 Tbsp mayonnaise
½ cup or so Jalapeno braised chuck roast or short ribs, cooked and shredded, with pan jus reserved (recipe follows)
⅓ cup Majestic Picklery Bread & Butter Pickled Carrots, cut lengthwise into matchsticks
⅓ cup Majestic Picklery Deli Style Bread & Butter Jalapeno Slices, drained
2 eggs, fried
Fresh scallions and cilantro, for serving

---BREAD & BUTTER JALAPENO BEEF & JUS---
1 lb beef chuck roast or short ribs
1 onion, roughly chopped
½ cup brine from Majestic Picklery Deli Style Bread & Butter Jalapeno Slices
½ cup beef broth or stock
2 Tbsp corn starch

Instructions

  1. ---FOR THE BREAD & BUTTER JALAPENO BEEF & JUS---
  2. This step could also be done in a slow cooker on low for 8-10 hours.
  3. Remove meat from fridge and allow to come to room temperature for an hour or so. Preheat oven to 275° F.
  4. Season generously with salt.
  5. In a large braising pan or dutch oven, heat 2 Tbsp oil over high heat until shimmering. Add chuck roast or short ribs and brown on all sides, about 3-5 minutes per side.
  6. Remove to a paper towel lined plate and set aside.
  7. Add onions and saute until translucent, about 3-4 minutes.
  8. Add jalapeno brine and beef broth and scrape up any browned bits on the bottom of the pan. Remove from heat and nestle chuck roast or short ribs back into the pan.
  9. Cook, uncovered, in the oven for 4-6 hours, occasionally basting the beef with the pan drippings. If the pan looks too dry add additional beef broth.
  10. When beef is very tender and falls apart easily it’s done. (Again, this step could also be done in a slow cooker on low for 8-10 hours.)
  11. Remove beef from the pan and set aside. Strain pan juices through a fine mesh strainer and back into the pan.
  12. . In a small bowl, whisk together 3 Tbsp cornstarch and 3 Tbsp cold water until fully combined, then drizzle into the reserved pan juices. Whisk to combine. Add additional cornstarch slurry or water until you reach desired consistency.
  13. Shred beef and drizzle with jus to moisten. Use beef to make your banh mi sandwich and enjoy!
  14. ---FOR THE BAHN MI SANDWICH---
  15. Toast baguette and spread with a generous layer of mayonnaise.
  16. . Add shredded beef, pickled carrots and jalapenos, and fried eggs.
  17. Tuck in some springs of cilantro and serve with a bowl of beef jus (recipe above) topped with scallions.
