Ingredients
---FOR THE EGGS---
12 large eggs
Salt, for boiling
---FOR THE EGG FILLING---
Egg yolks from the boiled eggs
1–2 Tbsp Mt. Olive Pickle Juicers 100% Kosher Dill Pickle Brine (to taste)
2–3 tsp instant mashed potato flakes (for thickening and structure)
1–2 Tbsp Mt. Olive Jalapeno Slices (diced)
1–2 Tbsp Mt. Olive Dill Relish
1 tsp Dijon mustard
1–2 Tbsp fresh chopped dill
Salt & pepper, to taste
A few drops green food coloring (optional but helpful for the tree look)
---FOR DECORATING---
Mt. Olive Roasted Red Peppers, cut into tiny circles using a metal straw (the "ornaments")
Finely grated Parmesan cheese (“snow”)
Instructions
- Place the eggs in a pot and cover with cold water by 1 inch.
- Bring to a boil, then reduce heat and simmer for 10–11 minutes.
- Transfer the eggs to an ice bath and let them cool completely
- Peel the eggs carefully.
- Cut each egg crosswise, about ⅔ of the way up so the base is slightly larger than the top.
- If the bottoms are rounded, shave a thin slice off the very bottom so the eggs sit upright without wobbling.
- Gently remove the yolks and place them in a mixing bowl.
- Set the egg white “cups” upright on a serving tray.
- In a food processor, blend the yolks with Pickle juice, dijon mustard, dill relish, chopped jalapeños and fresh dill.
- Mix in instant potato flakes a pinch at a time until the mixture becomes thick and pipeable.
- Add salt & pepper to taste.
- Add optional green food coloring if you want a brighter “tree” color.
- Stir until completely smooth.
- Transfer the filling to a piping bag fitted with a star tip (or any tip that will make textured tree layers).
- Pipe the filling upward in a swirling tree shape, finishing with a little peak on top.
- Cut tiny circles out of the roasted red peppers by pressing a metal straw into the pepper strips like a mini cookie cutter.
- Gently press these red “ornaments” into the piped trees.
- Dust the tops with finely grated Parmesan, letting it fall lightly like snow.
- Chill for 20–30 minutes to help the trees firm up, then serve as the cutest (and tangiest!) holiday appetizer on your table.
