Upside Down Candied Jalapeno Cornbread

Ingredients

2 boxes (11-15 oz) of your favorite cornbread mix (we used Krusteez Honey cornbread)
Accompanying ingredients for cornbread mix: eggs, milk, oil
1 jar Mt. Olive Candied Jalapeno Slices
Cooking spray
1 stick of butter

Instructions

  1. Prepare cornbread mix per the package instructions and set aside.
  2. Generously grease a bundt pan with cooking spray, then add half the candied jalapenos to the pan.
  3. Pour in some of the batter, add additional jalapeno slices, and repeat until the batter is gone.
  4. Feel free to nestle some additional jalapeno slices along the outside and inside rims of the pan.
  5. Bake per cornbread package instructions, checking for doneness with a cake tester.
  6. nce cooked, remove from oven and allow to cool for 10-20 minutes, then go around the pan with a butter knife to loosen the cornbread, before turning it out onto a cutting board.
  7. Melt the stick of butter, then add 1-2 Tbsp of the brine from the candied jalapenos. Stir to combine and then drizzle over cornbread. Slice, serve and enjoy!
