Ingredients

Oil
---CHICKEN MIXTURE---
1/3 cup Mt. Olive Jalapeno Slices, drained and diced
3 tbsp butter
2.5 tbsp flour
1 cup milk
1-2 chicken breast, diced into small pieces and seasoned with salt & pepper
1 tsp garlic & onion powder, chili flakes, oregano
Salt & pepper
Parsley
½ cup mozzarella cheese
---FOR COATING---
½ cup flour
Salt & pepper
½ tsp garlic powder, paprika
Panko breadcrumbs

Instructions

  1. Heat 1 tsp oil and cook the small diced chicken pieces over medium heat and set aside.
  2. Melt butter over medium heat, whisk in the flour and cook until slightly golden. Gradually pour milk, whisking constantly to avoid lumps. Cook until it thickens.
  3. Add the sauce to the cooked chicken followed by parsley and seasonings. Mix well, let the mixture cool, then refrigerate for at least 2 hours to firm up.
  4. Once chilled, add cheese and jalapenos and mix well.
  5. Whisk together flour, seasonings & gradually add water to make a slurry.
  6. Scoop mixture into small balls, dip into the slurry, then roll in panko breadcrumbs until fully coated.
  7. Fry them until golden & crispy. Drain on paper towels.
  8. Serve with dipping sauce & enjoy!
