Ingredients

6 flour tortillas, street taco size
¼ cup of Mt. Olive Jalapeno Slices or Diced Jalapenos
1/3 can refried beans
Cheese to taste
6 medium eggs
Cilantro
hot sauce
salsa
extra jalapenos (for topping)

Instructions

  1. Preheat oven to 350F.
  2. Wrap the tortillas in a paper towel and microwave for 15 seconds to warm them and make them easier to bend.
  3. Fold the tortillas into a greased muffin tin, creating a cup shape.
  4. Chop the Mt. Olive Jalapenos and mix into the refried beans.  Add a small layer to each cup.
  5. Add cheese to each cup.
  6. Top each cup with an egg, careful not to crack the yolk.
  7. Cook for 20 minutes, until egg whites are solid but the yolk is still runny. 
  8. Top with more Mt. Olive Jalapenos, hot sauce, salsa, and/or fresh cilantro.
