Irish Nachos

These Irish Nachos are the perfect snack for St. Patrick’s Day or tailgates. These pub-style nachos are made with thinly sliced potatoes baked to crispy perfection, melty cheese, corned beef, and diced Mt. Olive Hamburger Dill Chips. You can even use a shamrock-shaped veggie cutter to make the perfect lucky clover topper for your festive nachos.

Mt Olive Pickles

Ingredients

5 thinly sliced russet potatoes (slice to ¼” thickness)
2 tbsp olive oil
⅛ tsp salt
⅛ tsp pepper
¼ tsp parsley
⅛ tsp garlic powder
3 cups medium cheddar cheese (shredded)
½ cup corned beef (chopped)
½ cup cooked bacon (chopped)
½ cup Mt. Olive Hamburger Dill Chips (diced or shamrocks)
¼ cup green onions (diced)
2 tbsp sour cream

Instructions

  1. Thinly slice washed potatoes into ¼” thick disks. Use a knife or a mandolin.
  2. Coat the potatoes in olive oil and season with salt, pepper, parsley, and garlic powder.
  3. Arrange the potatoes on a parchment paper-lined baking sheet and bake at 400°F for 15-20 minutes. Let the cooked potatoes cool for 5 minutes.
  4. Arrange the crispy, cooked potatoes in the bottom of a cast-iron skillet or a greased baking dish. Top with shredded cheese, corned beef, bacon, pickles, and green onions. Repeat this process twice more. If you use shamrock-shaped pickles, save them for the top layer.
  5. Bake the nachos for 15-20 minutes at 350°F. Top with sour cream, green onion, and more pickles. Serve hot and enjoy!
