Italian Sub Pasta Salad

16 oz rotini
5 oz grape or cherry tomatoes - halved
6 oz Italian meat
1/3 red onion – diced
1 heart of romaine – chopped
½ cup Mt. Olive banana peppers

¾ cup olive oil
¼ cup red wine vinegar
½ tbsp Dijon mustard
1 tsp salt
½ tsp oregano
¼ tsp pepper


  1. Cook the pasta according to instructions, let it cool before mixing with the other ingredients.
  2. Cut your tomatoes in half, dice your onion, chop your romaine, and cut up your meat. Add to pasta along with the Mt. Olive banana peppers when pasta has cooled.
  3. Combine dressing ingredients and stir vigorously to ensure they are combined.
  4. Pour over salad and stir to evenly coat.
