Ingredients

1 (14 oz) can chickpeas, drained and rinsed
⅓ cup tahini
¼ cup olive oil
Juice of 1 lemon
1 (12 oz) jar Majestic Picklery Bread & Butter Pickled Carrots (drained, liquid reserved)

Instructions

  1. Reserve a few carrots for garnish, then combine chickpeas, tahini, olive oil, lemon juice and pickled carrots in a high speed blender.
  2. Blend until smooth, adding up to ½ cup of cold water (and/or a tablespoon or two of pickled carrot brine) to reach desired consistency.
  3. Pour into a bowl and garnish with sliced pickled carrots.
