Ingredients

1 cup sushi rice, cooked and prepared per package instructions
2 sheets sushi nori
4-5 Mt Olive Kosher Dill Pickle Spears
Soy sauce, for serving

Instructions

  1. Tightly wrap a sushi mat or bamboo placemat with plastic wrap.
  2. Fill a bowl with cool water and keep it nearby.
  3. Place a sheet of nori (shiny side down) toward the bottom of the mat.
  4. About ½” up from the bottom of the sheet, add sushi rice in a thin, rectangular layer all the way across the nori and about ¾” from the top edge.
  5. Dip fingertips in the water to prevent the rice from sticking as you spread it out.
  6. Once you have a rectangle of rice, use wet fingertips to indent a “well” across the rice.
  7. Add pickle spears to the well, wet the edges of the nori and use the sushi mat to roll the nori away from you into a very tight roll.
  8. Dip a very sharp knife in water and cut the roll in half, and then into three pieces each to create six uniform pieces of sushi.
  9. Serve with soy sauce and enjoy!
