Ingredients

---FOR PICKLE WAFFLE FRIES---
(2) 24 oz jars Mt. Olive Kosher Baby Dills
2 cups shredded cheddar
2 large eggs
1 Tbsp garlic powder
2 tsp smoked paprika

---FOR LEMON HORSERADISH DIPPING SAUCE---
2/3 cup sour cream
2 Tbsp prepared horseradish, drained
2 Tbsp mayo
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper

Instructions

  1. ---FOR LEMON HORSERADISH DIPPING SAUCE---
  2. Add all ingredients to a small bowl then whisk together until well-combined. Chill until ready to serve.
  3. ---FOR PICKLE WAFFLE FRIES---
  4. Using a food processor, chop/grind up pickles until minced. Remove from food processor then, using a tea towel or cheesecloth, squeeze as much moisture as possible out of them.
  5. In a medium bowl, add drained pickle mixture, cheddar, egg, garlic powder, and paprika. Stir until well-combined.
  6. Add pickle fries mixture to preheated waffle maker. Cook for about 5 mins (depending on your waffle maker), or until golden brown, crispy, and waffle stays together. Remove from waffle maker and set aside. Repeat with remaining pickle fries mixture.
  7. Slice each waffle into thirds then serve with Lemon Horseradish Dipping Sauce. Enjoy!
