Ingredients

---FOR CHICKEN BOWL---
2-3 homemade or store bought chicken tenders
¼ cup Store bought tikka masala sauce
⅓ cup cooked jasmine rice
⅓ cup cooked quinoa
1 mini cucumber, sliced
½ cup shredded cabbage
Mt. Olive Pickled Red Onions
Jalapeno mint yogurt sauce, recipe follows
Cilantro, for garnish
---FOR JALAPENO MINT YOGURT SAUCE---
¼ cup Tbsp Mt. Olive Jalapeno Slices
½ cup plain greek yogurt
½ cup loosely packed cilantro leaves
1-2 Tbsp jalapeno brine
 

Instructions

  1. ---FOR CHICKEN BOWL---
  2. Cook chicken tenders according to package instructions.
  3. Remove from oven and brush liberally with tikka masala sauce, returning to oven for an additional 5 minutes or so.
  4. Assemble bowl by combining rice and quinoa, topping with cucumber slices and shredded cabbage, tikka chicken tenders, and a generous amount of Mt. Olive Pickled Red Onions.
  5. Drizzle with jalapeno mint yogurt sauce, garnish with cilantro leaves and enjoy!

  7. Combine all ingredients in a blender or food processor and blend until smooth.
