½ cup plain Greek yogurt
⅓ cup mayonnaise
1 Tbsp dijon mustard
1-2 Tbsp pickle brine or Mt. Olive Pickle Juicers
1 cup cooked, chopped chicken (such as from a rotisserie chicken or poached chicken breast)
½ cup Mt. Olive Dill Salad Cubes
⅓ cup celery, chopped (about 3 stalks)
⅓ cup red onion, chopped (about half a large onion)
Fresh dill, salt and pepper to taste
Croissants, bread, lettuce or crackers, for serving
- Whisk all dressing ingredients together in a large bowl.
- Add chopped chicken, salad cubes, celery and onion and stir to combine.
- Enjoy on croissants, in lettuce wraps or with crackers!
