Ingredients

---FOR THE TURKEY---
1 whole turkey (16–20 lbs), thawed if frozen
Kosher salt & freshly ground black pepper
2 tbsp olive oil or melted butter
1 onion, quartered
1 lemon, halved
Fresh herbs (rosemary, thyme, sage — optional, for cavity)
---FOR THE JALAPENO HONEY GLAZE---
¼ cup olive oil
1 cup Mt. Olive Pickled Jalapeños (any variety)
â…” cup honey
½ cup dry white wine or chicken broth
3–4 whole garlic cloves, peeled
1 tbsp fresh thyme leaves (or 1 tsp dried)
1 tbsp chopped fresh sage (or 1 tsp dried)
Optional: 1 tbsp jalapeño brine (for extra heat & tang)

Instructions

  1. ---PREP THE TURKEY---
  2. Preheat oven to 325°F.
  3. Remove giblets & neck; pat turkey dry.
  4. Rub all over with olive oil or butter; season well with salt & pepper.
  5. Stuff cavity with onion, lemon, and herbs if desired.
  6. Place on a roasting rack in a large roasting pan, breast side up.
  7. ---ROAST---
  8. Roast uncovered at 325°F for 4–5 hours total, or until a thermometer in the thigh reads 165°F.
 (Approx. 13–15 min per lb.)
  9. ---MAKE THE GLAZE---
  10. In a saucepan, combine olive oil, jalapeños, honey, wine or broth, garlic, thyme, sage, and brine (if using).
  11. Bring to a boil over medium-high heat.
  12. Reduce to a simmer and cook 25–30 min, stirring occasionally, until slightly thickened.
  13. Blend with an immersion blender until smooth and glossy.
  14. If needed, simmer 2–3 more minutes to thicken.
  15. ---GLAZE & FINISH---
  16. After 2½ hours of roasting, begin brushing the glaze on every 30–40 min for the remaining cook time.
  17. Tent loosely with foil if the skin browns too quickly.
  18. Continue until golden, lacquered, and cooked through.
  19. ---REST & SERVE---
  20. Transfer to a cutting board and tent loosely with foil.
  21. Rest 30–45 min before carving.
  22. Brush with any remaining warm glaze before serving.
  23. ---TIPS---
  24. For milder heat: use Mt Olive mild or No Heat Jalapenos
  25. Make the glaze up to 2 days ahead; reheat before brushing.
  26. Pairs beautifully with cornbread stuffing, roasted sweet potatoes, and a crisp white wine.
