Ingredients
2 cups cabbage, thinly sliced into ribbons
¾ cup Majestic Picklery Bread & Butter Pickled Carrots, drained and cut into matchsticks (save brine and set aside)
¼ cup mayonnaise
1 tsp yellow mustard
Thinly sliced scallions, for serving
Instructions
- Drain Majestic Picklery Bread & Butter Pickled Carrots, and cut into matchsticks. (Save liquid/brine and set aside)
- In a large bowl, combine cabbage and carrots.
- In a small bowl, whisk together mayonnaise and mustard, adding 1-2 Tbsp of brine from the pickled carrots. Taste and adjust as needed.
- Drizzle dressing over coleslaw and stir to combine.
- Garnish with scallions and enjoy!
