Ingredients

1 baguette
Olive oil to taste
Salt to taste
4oz goat cheese (plain or garlic and herb works great)
1 jar Mt. Olive Roasted Red Peppers
Fresh thyme

Instructions

  1. Cut your baguette in ½ inch slices with a serrated knife.
  2. Brush each side of sliced bread with olive oil and sprinkle with salt.
  3. Place bread slices on a cookie sheet, bake at 375F for 10-15 minutes, flipping after 5 minutes. You want the bread to become crispy and golden brown but not overdone. Let your bread cool before assembling crostinis.
  4. While your bread cools, slice Mt. Olive Roasted Red Peppers in long skinny pieces, set aside.
  5. When bread is cool, spread a smear of goat cheese on top, then place 1-2 pieces of red pepper on top of that.
  6. Finish off by tipping with some fresh thyme and a few more drops of olive oil.
  7. Enjoy!
