Ingredients

---SMASH BURGER TACOS---
1 lb 80/20 ground beef
4 fajita size flour tortillas
1/2 lb thick-cut bacon, crumbled
4 slices American cheese
1 onion, thinly slivered
2 Tbsp butter
Mt. Olive Hamburger Dill Chips, for garnish
Roasted Red Pepper Sauce

---ROASTED RED PEPPER SAUCE---
1 cup plain Greek yogurt
1 Tbsp lemon juice
1 cloves garlic, minced
1/3 cup chopped Mt. Olive Roasted Red Peppers (drained as much as possible)
1/2 tsp kosher salt
1/2 tsp smoked paprika

Instructions

  1. ---ROASTED RED PEPPER SAUCE---
  2. Combine all ingredients in a food processor (or bowl and using an immersion blender) and process until smooth. Chill until ready to serve.
  3. ---SMASH BURGER TACOS---
  4. Heat griddle or cast iron skillet on high heat. Be sure to get the cooking surface very hot. Place 2 beef balls evenly spaced apart. Top each with tortilla shell. Using a grill weight or your hand, smash down the beef so that it is about 1/4” thick. Cook for 2-3 minutes or until meat reaches desired doneness.
  5. Flip taco and top with bacon crumbles (to taste) and 1 slice American cheese. Continue cooking for 1-2 mins to allow the cheese to melt and the tortilla to crisp. Remove from heat and set aside.
  6. Repeat steps 2 & 3 with remaining 2 beef balls.
  7. Serve with Roasted Red Pepper dipping sauce and enjoy!
