10 eggs
1 cup ricotta cheese
1 cup cottage cheese
½ cup Greek yogurt
1 cup cherry tomatoes, halved
1 cup Mt Olive Roasted Red Peppers, chopped
½ cup Mt Olive Diced Jalapenos
½ cup Mt Olive Banana Pepper rings


  1. Preheat oven to 350°F.
  2. In a large bowl, combine eggs, cheese and yogurt. Stir to combine.
  3. Grease a large baking dish with cooking spray and add almost all of the tomatoes, red peppers, jalapenos and banana peppers, scattered about. Pour egg mixture over veggies and top with remaining veggies.
  4. Bake until golden brown and set, about 45 minutes.
