Ingredients

3lbs baby red potatoes
½ cup Majestic Picklery Deli Style Bread & Butter Mild Banana Pepper Rings, drained
½ cup Majestic Picklery Deli Style Bread & Butter Mild Jalapeno Slices, drained
½ lb cooked bacon, crumbled
½ cup mayonnaise
2 Tbsp dijon mustard
Thinly sliced scallions, for serving

Instructions

  1. Boil potatoes until fork tender, drain and set aside to cool in a large bowl.
  2. Once potatoes are room temperature, add banana peppers, jalapenos and bacon.
  3. Season with salt and pepper to taste.
  4. In a small bowl, whisk together mayonnaise, dijon, and 1-2 Tbsp of the brine from the pickled jalapenos.
  5. Taste and adjust as needed.
  6. Drizzle dressing over potatoes and stir to combine.
  7. Garnish with scallions and enjoy!
