Ingredients
3lbs baby red potatoes
½ cup Majestic Picklery Deli Style Bread & Butter Mild Banana Pepper Rings, drained
½ cup Majestic Picklery Deli Style Bread & Butter Mild Jalapeno Slices, drained
½ lb cooked bacon, crumbled
½ cup mayonnaise
2 Tbsp dijon mustard
Thinly sliced scallions, for serving
Instructions
- Boil potatoes until fork tender, drain and set aside to cool in a large bowl.
- Once potatoes are room temperature, add banana peppers, jalapenos and bacon.
- Season with salt and pepper to taste.
- In a small bowl, whisk together mayonnaise, dijon, and 1-2 Tbsp of the brine from the pickled jalapenos.
- Taste and adjust as needed.
- Drizzle dressing over potatoes and stir to combine.
- Garnish with scallions and enjoy!
