Ingredients

1 Tbsp olive oil
1 yellow onion, diced
1 lb. lean ground beef
2 ½ Tbsp chili powder
2 Tbsp ground cumin
2 Tbsp tomato paste
1 Tbsp garlic powder
1 ½ tsp salt
1 tsp black pepper
1 ½ cups beef broth
1 -15 oz. can diced tomatoes
1 -16 oz. red kidney beans
1 -8 oz. can tomato sauce
1 cup sour cream
1 cup shredded cheese
Mt. Olive Jalapeno Slices
1/2 cup chopped green onions

Instructions

  1. In a large soup pot, add the olive and set over medium high heat. Let it get hot then add the onions and cook for 5 minutes stirring occasionally.
  2. Add the ground beef to the pot and break it apart. Cook for 6-7 minutes until the beef has browned, stirring occasionally. Add in the spices and tomato paste stirring well until combined.
  3. Add in the broth, diced tomatoes, drained beans, and tomato sauce. Stir well.
  4. Bring the liquid to a low boil then reduce to a simmer, uncovered for 20-25 minutes stirring occasionally.
  5. Remove from the heat and let it rest before serving. Top with plenty of Mt. Olive Jalapeno Slices, plus sour cream, green onions and shredded cheese.
