How We Make Bread and Butter Pickles

Making pickles is what we do, and there’s a method to the pickle madness. For the pickling process, Mt. Olive uses pickling cucumbers rather than the long green types of cucumbers you find in the produce section of your grocery store. These cucumbers are selected based on their size, the thickness of their skin, freshness, and other factors to ensure we can deliver only the highest quality and best-tasting products to our customers. The pickling cucumbers are harvested when they are just the right size so all the pickles in the jar are as uniform as possible. Once we cut the fresh cucumbers, we add the spices to the jars, the cucumbers, and then the cover brine, or pickle juice, that includes vinegar and  other flavors and ingredients. Finally, it’s  pasteurized to just the right temperature and quickly cooled. This makes the product shelf-stable.
